Zucchini Bread Recipe with Infused Oil

Ingredients:

3 eggs
1 cup infused oil (see Making Herbal Infusions)
2 cups sugar
2 cups grated zucchini
3 cups flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons cinnamon
2 teaspoon vanilla extract
1/2 cup walnuts (optional)
    1. Beat eggs until light and foamy.
    2. Add sugar, infused oil, zucchini, and vanilla. Mix well.
    3. Separately mix dry ingredients: flour, soda, baking powder, salt and cinnamon. 
    4. Add flour mixture to egg mixture and mix it until well combined. 
    5. If desired, add nuts and mix again.
    6. Pour the dough into greased 5 by 9 loaf pans and bake at 325 F for approximately 1 hour or until a bamboo skewer inserted in the center comes out clean.
    7. Remove from pans and cool on a wire rack.
